Buffalo Cauliflower Bites
Ingredients
- 1 head cauliflower
- 1 tbsp cooking oil
- 1/2 cup (your favorite) buffalo sauce
Instructions
- Preheat oven to 475°F and toss cauliflower with olive and salt & pepper to combine. Arrange in an even layer (important for getting color and crunch!) on a sheet pan.
- Roast until golden-brown and beginning to crisp, about 15-20 minutes.
- Remove the cauliflower from oven. Pour the hot sauce mixture over the cauliflower and use a spatula to toss until the florets are evenly coated. Return to the oven and roast until crispy, 5 to 10 minutes more. The bites are best eaten immediately.
Bacon-Wrapped Jalapeño Poppers
Ingredients
- 8 oz. cream cheese
- 10 fresh jalapeños
- 1 pkg. bacon
Instructions
- Cut jalapeños in half lengthwise and core out the centers and seeds with a spoon. (Leave some seeds in the jalapeños if you enjoy the spice).
- Stuff each half with your desired amount of cream cheese.
- Cut bacon strips in half and cook in a skillet until cooked through but not crisped, leaving bacon soft and pliable enough to wrap. Wrap each jalapeño half with a piece of bacon, then bake the jalapeño poppers for 15 minutes at 375 degrees.
Pizza Dip
Ingredients
- 1 jar (your favorite) tomato sauce
- 8 ounces mozzarella cheese (shredded or fresh!)
- Bread for dipping (or substitute your favorite dipping vessel!)
Instructions
- Layer marinara sauce and mozzarella cheese in a heat-safe dish (like a cast-iron skillet).
- Bake at 350 degrees for 15 minutes or until cheese is melty, slightly golden-brown, and sauce is bubbling.
- Serve with your favorite dipping vessel!
7 Layer Dip
Ingredients
- 7 layer dip (from the deli!)
- fresh cilantro
- Your favorite chips or veggies for dipping!
Instructions
- Grab a 7 layer dip from the deli!
- Chop fresh cilantro (and jalapeño if you like spice) and sprinkle over dip.
- Serve with your favorite tortilla chips and/or veggies for dipping!
Caramelized Onion Dip
Ingredients
- caramelized onion dip (from the deli!)
- 1 large onion, very thinly sliced
- Your favorite chips or veggies for dipping!
Instructions
- Use a heavy-bottomed pot or pan with high sides, such as one made from stainless steel or cast iron. This ensures even heat distribution and prevents hot and cold spots that could result in uneven cooking results.
- Add enough onions to form a single layer to the pan and toss to coat with oil. Cook onions and stir until onions turn translucent, 1 to 2 minutes. Add another layer of onions and pinch of salt, tossing to coat, stirring to cook for 1 to 2 minutes. Repeat the process until you’ve added all the onions.
- Reduce heat to medium-low and cook onions, stirring occasionally until blonde caramelized (15-20 mins). For a jammier texture, cook longer. Add water if sticking. For dark-golden brown onions, cook an additional 10-15 mins, watching carefully.
- Cool the onions completely and cover the dip with your onion mixture. Serve with your favorite crunchy chips and/or veggies for dipping!
