Sheet pan meals are an easy answer to dinner on busy weeknights. Everything cooks on one pan for easy hands-off cooking and very little cleanup!
Sheet Pan Spring Gnocchi
3-4 Servings (Under $15)
Ingredients
- 1 lb. gnocchi
- 1/2 large red onion, cut into ½”-thick wedges
- 8 oz. cherry tomatoes
- 10 leaves fresh basil
- 2 oz. parmesan cheese
- 1/2 head garlic
Instructions
- Preheat to 425°. Toss onion, tomatoes, gnocchi, and oil on a rimmed baking sheet to coat; seasoning to taste with salt and black pepper (or your choice of seasonings).
- Roast, stirring once or twice, until gnocchi are golden and starting to crisp, most of the tomatoes have burst, and onion is golden, 25–30 minutes.
- Add basil and Parmesan to baking sheet and toss to combine. Divide among plates and drizzle with a little more oil.
Sheet Pan Peppers & Onions
3-4 Servings (Under $15)
Ingredients
- 1 lb. fresh sausage, such as sweet or hot Italian sausage
- 1 bell pepper
- 8 oz. cherry tomatoes
- 1/2 large red onion, cut into ½”-thick wedges
- 1/2 head garlic
Instructions
- Heat the broiler with a rack 6 inches from heat source. Score the sausages in a few places on both sides, making sure not to cut all the way through. On a baking sheet, toss the sausages with the peppers, tomatoes, onions, and olive oil. Season to taste with salt and pepper (or your choice of seasonings) and spread in an even layer.
- Broil until the sausage is cooked through and the peppers and tomatoes are nicely charred, 10 to 15 minutes. Rotate the pan and ingredients as needed so everything gets under the broiler. If everything is charring too quickly, cover the pan with foil. Serve immediately.
Sheet Pan Roasted Garlic Lemon Chicken
3-4 Servings (Under $15)
Ingredients
- 1 lb. Gerber chicken thighs
- 1 lb. Yukon gold potatoes (boiled just to fork tender, strained)
- 8 oz. cherry tomatoes
- 1 large lemon, halved
- 1/2 head garlic
Instructions
- Preheat oven to 425°F.
- Gently toss cooked & halved potatoes, cherry tomatoes, garlic, lemon halves, and chicken in oil and season with salt and pepper to taste (or your choice of seasonings).
- Place potatoes, cherry tomatoes, garlic, lemon, and chicken in single layer on a sheet pan and bake until internal temperature of chicken reached 165 degrees.
- Squeeze baked lemons over ingredients and enjoy!
Sheet Pan Flaky White Fish and Roasted Garlic Potatoes
3-4 Servings (Under $20)
Ingredients
- 1 lb. white fish filets (tilapia, cod, or pike)
- 1 lb. Yukon gold potatoes (boiled just to fork tender, strained)
- 8 oz. cherry tomatoes
- 1 large lemon, zested & juiced
- 1/2 head garlic
Instructions
- Preheat oven to 425°F.
- Gently toss cooked & halved potatoes, cherry tomatoes, garlic, lemon zest and juice, and fish in oil and season with salt and pepper to taste (or your choice of seasonings).
- Place potatoes, cherry tomatoes, garlic, lemon, and fish in single layer on a sheet pan and bake until fish until cooked through or just opaque. Serve optionally with fresh herbs and enjoy!
Sheet Pan Roasted Chicken & Spring Veggies

Ingredients
- 1 lb. Gerber chicken drumsticks
- 1 med. zucchini, cut into ½”-thick circles
- 1 small head broccoli, cut into florets
- 8 oz. cherry tomatoes
- 1/2 large red onion, cut into ½”-thick circles
Instructions
- Preheat oven to 425°F.
- Toss the chicken and vegetables in olive oil and season to taste with salt and pepper (or your choice of seasonings).
- Place potatoes, cherry tomatoes, garlic, lemon, and chicken in single layer on a sheet pan and bake until internal temperature of chicken reached 165 degrees.
- Serve optionally with fresh herbs and enjoy!
