Ingredients
Crispy Air Fried Potatoes
  • 1 lb. gold potatoes
  • 1 tsp. salt
  • 2-3 Tbsp. oilive oil
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. paprika
  • to taste salt and pepper
Breakfast Skillet
  • 5 Tbsp. butter
  • 1/4 cup red bell pepper
  • 1/3 cup yellow onion
  • from above cripy air fried potatoes
  • 6 each eggs
  • to taste Cajun seasoning
  • to taste salt and pepper
Optional Toppings
  • 1 cup crispy bacon or sliced ham
  • 1 Tbsp. parsley or cilantro, chopped
  • 1 cup shredded cheddar cheese

Crispy Air Fried Potatoes
  1. Bring a large pot of water to a boil. While that's happening, clean your potatoes and slice them into medium sized chunks. Once the water is boiling, add 2 tsp salt and your potatoes to the pot. When the water comes back to boiling, set your timer for 10 minutes. When the time is up, drain your potatoes and pat them dry with a paper towel.
  2. Preheat your air fryer to 400° (or oven to 425°). Transfer your potatoes to a bowl and toss them with oil and seasonings to coat. Spray your basket with olive oil and air fry for 10 minutes. Flip them over and air fry again for another 10 minutes or until crispy. If using a conventional oven, triple cooking time.
Breakfast Skillet
  1. Cut bell peppers and onions into a large rough chop.
  2. In a very large nonstick skillet (12 inches) heat 4 tablespoons butter to medium heat. When the butter has melted, saute the red pepper and onions. When slightly tender, but still with a nice texture/crunch, add the potatoes. Season to taste with salt and pepper, and cook over medium heat for 5 additional minutes, stirring occasionally.
  3. Cook the eggs in a non-stick skillet (seasoning to taste with salt and pepper) and when complete, top your potato and veggie mixture with cooked eggs.
  4. Optionally top with bacon, ham, fresh herbs and cheese and serve with fresh tortilla or toast and enjoy!
