Ingredients
  • 1/2 yellow onion, diced
  • 2 medium carrots, sliced
  • 1 Tbsp. butter
  • 3 small red potatoes, peeled and diced
  • 3 cups broccoli, finely chopped
  • 4 cups vegetable broth
  • 2 cups cheddar cheese, shredded
  • 2 cups milk
  • 1/4 tsp. pepper
  • 1/2 tsp. paprika
  • 1 tsp. salt

Instructions
  1. In a large saucepan, saute onion and carrots in butter over medium heat until carrots are tender.
  2. Add flour, pepper, salt, and paprika and stir until combined.
  3. Add broth, milk, broccoli, and potatoes, stirring until it boils and thickens.
  4. Reduce heat; cover and simmer for 10-15 minutes or until potatoes are tender.
  5. Turn off heat. Stir in cheese and combine until melted. Enjoy!
