Chipotle Tamale Pie

Ingredients
  • 1/2 large white onion
  • 1/2 bag frozen mixed vegetables
  • 1 28 oz. can tomatoes
  • 2-3 chipotle peppers in adobo sauce
  • 2 Tbsp. taco seasoning
  • oil, salt and pepper
  • 1 box cornbread mix
  • 1 egg
  • 1/3 cup milk

  • 1 cup dry black beans or a can of pre-cooked black beans
  • salt and pepper to taste

Simple Black Beans
  1. Rinse beans.
  2. Cover with boiling water in a glass bowl and allow to soak for 30-60 minutes.
  3. Drain and add to a large pot with enough fresh water to cover by 2 inches.
  4. Bring to a boil, reduce heat to low, and simmer for 1-2 hours until beans are tender. Season with salt and pepper.
Tamale Pie
  1. Preheat oven to 375° F. Grease an 8x8 baking pan.
  2. Peel and dice half an onion. Heat a drizzle of olive oil in a skillet over medium-high heat. Sauté onion until translucent, about 3-5 minutes.
  3. Add frozen veggies, tomatoes, 2-3 chipotle peppers in adobo sauce (use more or less depending on your spice preference), taco seasoning, black beans and a pinch of salt and pepper. Stir together and bring to a simmer. Cook until combined and slightly thickened.
  4. While bean and vegetable filling cooks, combine egg, milk, and cornbread mix according to box instructions.
  5. Pour bean and vegetable filling into greased pan. Spoon cornbread batter on top, using a spoon to spread it as evenly as possible. Bake for 20-25 minutes, or until cornbread topping is golden brown.
  6. Serve tamale pie with wedges of lime and cilantro. Enjoy!
