Ingredients
- 1 15 oz can coconut milk
- 1 cup brown rice
- 1 apple, peeled, cored and diced
- 1/4 cup maple syrup
- 1 Tbsp. vanilla extract
- 2 tsp. ground cinnamon
- 1 cup unsweetened almond milk
- 1/8 tsp. ground nutmeg
- 1 cup raisins

Instructions
- Pour coconut milk into a saucepan and bring to a boil.
- Add rice to the boiling coconut milk.
- Let it boil for 5 minutes, cover, then lower heat and simmer for 20 minutes.
- Remove lid, stir, add in apple, maple syrup, vanilla extract, cinnamon, 1 cup almond milk, nutmeg, and raisins. Mix well.
- Continue to cook for another 10 minutes. Add more almond milk to reach desired consistency.
- Stir frequently so the rice doesn't stick to the bottom of the pan. Remove from heat and chill until cold, then serve.
