Reminiscent of an ice cream bar, these healthy frozen treats are perfectly sweet and satisfying!
2large, ripe bananas
1/4cuppeanut butter (or nut butter of choice)
cinnamon, to taste (optional)
1tsp. coconut oil (optional)
desired toppings: chopped nuts, shredded coconut, etc.
Line a baking sheet with parchment paper.
Peel each banana and cut in half lengthwise, then cut into 1.5- to 2-inch pieces. Place banana pieces on the lined baking sheet and freeze for 1 hour.
Remove pan from freezer and spread peanut butter (or any other nut butter) on top of each banana piece. Sprinkle banana bites with cinnamon, if desired. Place back in freezer to set.
Melt the chocolate chips, adding a tsp. of coconut oil, if desired, for a smoother consistency.
Remove pan from freezer and use a spoon to spread a layer of chocolate over each banana bite. Immediately sprinkle with chopped nuts, shredded coconut, or other toppings. Return to the freezer so the chocolate can harden.
Once bites are fully set, transfer to a freezer-safe container for storage and enjoy your treats any time!
