Ingredients
Grapefruit Thyme Virgin Spritzer
  • 2 slice grapefruit
  • 4 oz. grapefruit juice
  • 2 oz. soda water
  • 1 tsp thyme simple syrup add to your sweetness preference
  • 1 sprig thyme
  • to rim kosher salt
  • to rim sugar
Thyme Simple Syrup (makes 1/2 cup)
  • 1/2 cup sugar
  • 1/2 cup water
  • 10 sprigs thyme

Thyme Simple Syrup
  1. Add sugar, water, and thyme to a small pot and simmer until liquid has reduced by half.
  2. Remove from heat and cool completely. Strain into a jar or container.
Grapefruit Thyme Virgin Spritzer
  1. Pour half the salt and half the sugar onto a plate just larger than the rim of the mocktail glass and mix the salt and sugar to incorporate. There should only be enough salt and sugar to cover the base of the plate.
  2. Run a grapefruit wedge along the rim of the glass. This will allow the salt and sugar to adhere to the glass.
  3. Gently press the rim of the glass into the salt and sugar mixture.
  4. Carefully fill the salt and sugar rimmed glass half full with ice.
  5. Pour the grapefruit juice, soda water, and thyme simple syrup into the glass and stir. Garnish with fresh grapefruit and thyme.
