Ingredients
  • 2 Tbsp. cooking oil
  • 1 lb. Ferndale ground turkey
  • 2 cloves garlic, minced
  • 1 small yellow onion, diced
  • 1 small head of broccoli, chopped
  • 2 small sweet potatoes, diced
  • salt and pepper, to taste
  • spices, to taste*
  • 1/2 cup shredded mozzarella cheese, for serving
  • cooked quinoa or brown rice, for serving

Instructions
  1. Heat the oil in a cast iron skillet over medium-high heat.
  2. Add the ground turkey and garlic, using a wooden spoon to break up the turkey as it cooks. Season with salt and pepper to taste. Cook for about 5 minutes, stirring occasionally.
  3. Add the onions and cook until starting to soften, about 2 minutes.
  4. Add broccoli, sweet potatoes, desired spices* and a dash of salt and pepper, to taste.
  5. Cover the skillet and cook, stirring occasionally, until the broccoli and sweet potatoes are tender. Add a splash of water or broth to help the potatoes cook faster.
  6. When the vegetables are tender, sprinkle on the mozzarella and let melt.
  7. Serve turkey and vegetable mixture over your favorite cooked grain. Enjoy!

*This adaptable recipe provides a great foundation for your favorite flavors. Try Italian seasoning and a pinch of red pepper flakes, or season with chili powder and cumin for southwest flair. You can also flavor the dish with your favorite fresh herbs, like rosemary and thyme!
