Ingredients
  • 2 Tbsp. olive oil
  • 1 medium onion
  • 1 lb. ground turkey
  • 2 Tbsp. chili powder
  • 2 tsp. garlic powder
  • 2 tsp. cumin
  • 2 tsp. maple syrup
  • 2 medium limes, juiced
  • 1/2 cup salsa
  • 2 cups red cabbage or kale, chopped
  • 3 Tbsp. cilantro minced
  • 1 Tbsp. apple cider vinegar
  • 1 Tbsp. honey
  • 1 pinch salt and pepper, to taste
Optional toppings
  • 1 package cherry tomatoes, halved
  • 1/2 bunch cilantro, chopped
  • 1 dash hot sauce
  • 1 medium avocado, sliced or mashed
  • 1 bag tortilla chips, crushed
  • 1 cup rice, uncooked

Instructions
  1. Place olive oil in a large skillet over medium-high heat and sauté onion and ground turkey for about 5 minutes or until meat is fully cooked. Add spices, salsa, maple syrup, and juice from 1 lime, and mix until combined. Set aside.
  2. While cooking, mix together your slaw: chopped kale or red cabbage, 3 Tbsp. cilantro, juice from 1 lime, apple cider vinegar, honey, and salt and pepper to taste.
  3. Prep each taco bowl with a base of crushed chips or rice, top with a scoop of the taco meat, the slaw, and finish with toppings as desired (tomatoes, avocado, cilantro, yogurt, hot sauce, cheese, etc.).
