Place olive oil in a large skillet over medium-high heat and sauté onion and ground turkey for about 5 minutes or until meat is fully cooked. Add spices, salsa, maple syrup, and juice from 1 lime, and mix until combined. Set aside.
While cooking, mix together your slaw: chopped kale or red cabbage, 3 Tbsp. cilantro, juice from 1 lime, apple cider vinegar, honey, and salt and pepper to taste.
Prep each taco bowl with a base of crushed chips or rice, top with a scoop of the taco meat, the slaw, and finish with toppings as desired (tomatoes, avocado, cilantro, yogurt, hot sauce, cheese, etc.).
