Hummus-Crusted Chicken

  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 clove garlic, minced
  • 1 onion, chopped
  • 2 Tbsp. olive oil
  • 2 boneless skinless chicken breasts, sliced in half
  • 1/2 cup prepared hummus
  • 1/2 lemon, juiced
  • 1 tsp. paprika
  • 1/4 cup crumbled feta
  1. Preheat oven to 450 degrees.
  2. Stir green bell pepper, red bell pepper, minced garlic, and onion together in the bottom of a 9-inch casserole dish. Drizzle olive oil over the vegetables; stir to coat.
  3. Coat chicken breasts completely with a thin layer of hummus and place on top of the vegetables. Drizzle with lemon juice and sprinkle with paprika.
  4. Cook chicken breasts in the preheated oven until no longer pink in the center and the juices run clear, about 35 minutes. Top with crumbled feta and serve.
