Ingredients
  • 2 cup water
  • 1 cup sugar
  • 1 small handful fresh lavender flowers or 1 Tbsp dried flower
  • 1 cup fresh lemon juice
  • 2 cup cold water
  • thin sliced lemons for garnish (optional)
  • ice

Instructions
  1. Cut the lavender flowers from the stems (no need to strip) and place in a medium bowl (be careful with glass bowls which may crack with boiling water.
  2. Pour the sugar over the flowers, and use your (clean) fingers to gently massage the flowers into the sugar.
  3. Pour 2 cups of boiling water over the lavender sugar and stir with a spoon until the sugar has melted. Cover and let infuse for 30 minutes.
  4. Strain the lavender-infused simple syrup and pour into a serving carafe or pitcher.
  5. Stir in the lemon juice and the 2 cups of cold water and taste - adjusting for tartness. When you have reached your desired tartness/sweetness, enjoy immediately. If you prefer to save for later, just leave out the ice until ready to serve. Add lemons and lavender flower for garnish and enjoy!
