A vegan pasta salad - perfect for summer picnics.

Ingredients
  • 1/2 cup balsamic vinegar
  • 2 Tbsp olive oil
  • ¼ tsp. black pepper
  • 2 garlic cloves, minced
  • ½ tsp. salt
  • 1/2 cup fresh basil leaves, chopped
  • 8 oz. brown rice pasta, cooked according to package instruction
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 cup broccoli, chopped
  • 2 cups cherry tomatoes, sliced in half
  • 1 cup black olives, sliced

Instructions
  1. Place the vinegar, oil, garlic, salt & pepper in a jar with a tight-fitting lid. Shake to combine. Set aside.
  2. Add the pasta and remaining ingredients to a large bowl. Add dressing to the bowl and stir to combine.
  3. Serve immediately or cover and refrigerate.
