- 5 large roma tomatoes, diced
- ½ cup red onion, diced
- ½ cup fresh cilantro, chopped and loosely packed
- 1 jalapeño pepper minced and seeded
- 1 medium lime zested and juiced
- 1 clove garlic, minced
- sea salt, to taste
- Add all ingredients to a large bowl and toss until combined.
- Serve immediately. Can be stored fresh in a sealed container for 1–2 days.
