Roasted Asparagus

  • 1 bunch asparagus
  • 1 Tbsp extra virgin olive oil
  • 1/4 tsp salt
  • 1 pinch ground pepper
  • 1 tsp Parmesan cheese, freshly grated (optional)

  1. Preheat the oven to 450 degrees F.
  2. Snap the woody ends off the asparagus (usually about 1 1/2 inches). Lay the asparagus in a single layer on a baking sheet, drizzle with olive oil and roll to coat.
  3. Sprinkle with salt and pepper to taste.
  4. Roast the asparagus for 4-5 minutes, then flip the spears.
  5. Roast until tender, about 4-5 more minutes
  6. Serve warm or at room temperature. Sprinkle with parmesan, if desired.
