
This delicious Roasted Delicata Squash recipe is a perfect start to a fall meal! Use this roasted squash two ways: Stuffed Delicata Squash or with a simple Delicata Squash Salad.

- 1 Delicata squash
- neutral oil (olive, avocado, or canola) for brushing
- salt to taste

- Preheat the oven to 350°F. Line a baking sheet with parchment paper for easier cleanup.
- Wash the squash thoroughly and pat dry. Slice it in half lengthwise. Scoop out the seeds and stringy flesh with a spoon.
- For stuffing: Roast the halves cut side up. Brush or spritz with oil and sprinkle with salt.
- For slices: Slice into ⅛–¼ inch half-moons. Arrange in a single layer on the baking sheet. Brush lightly with oil and sprinkle with salt.
- Roast for 25–35 minutes, flipping slices halfway through if using. Halves may take closer to 35–40 minutes. The squash is done when it’s fork-tender and lightly golden.
Recipe Notes
Do not peel delicata squash; the skin becomes tender when roasted.
For extra flavor, add a pinch of smoked paprika or cinnamon before roasting.
