  • 1 Delicata squash
  • neutral oil (olive, avocado, or canola) for brushing
  • salt to taste

Instructions
  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper for easier cleanup.
  2. Wash the squash thoroughly and pat dry. Slice it in half lengthwise. Scoop out the seeds and stringy flesh with a spoon.
  3. For stuffing: Roast the halves cut side up. Brush or spritz with oil and sprinkle with salt.
  4. For slices: Slice into ⅛–¼ inch half-moons. Arrange in a single layer on the baking sheet. Brush lightly with oil and sprinkle with salt.
  5. Roast for 25–35 minutes, flipping slices halfway through if using. Halves may take closer to 35–40 minutes. The squash is done when it’s fork-tender and lightly golden.
Recipe Notes

Do not peel delicata squash; the skin becomes tender when roasted. 

For extra flavor, add a pinch of smoked paprika or cinnamon before roasting.
