Ingredients
- 1 Tbsp olive oil
- 1 clove garlic, minced
- 1 bunch ramps, cleaned & trimmed
- 1 pinch salt and pepper
- 1 tsp pecorino cheese (can also use Parmesan)

- Heat a pan over medium high heat. Add oil and garlic, cook for 1-3 minutes and then add ramps.
- Sauté tossing with tongs, until the ramps begin to wilt. Remove from heat and sprinkle with salt, pepper and pecorino. Serve with fresh bread, cooked grains, or as a side dish to grilled meats.
