Sautéed Ramps with Pecorino

  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • 1 bunch ramps, cleaned & trimmed
  • 1 pinch salt and pepper
  • 1 tsp pecorino cheese (can also use Parmesan)
  1. Heat a pan over medium high heat.  Add oil and garlic, cook for 1-3 minutes and then add ramps. 
  2. Sauté tossing with tongs, until the ramps begin to wilt. Remove from heat and sprinkle with salt, pepper and pecorino. Serve with fresh bread, cooked grains, or as a side dish to grilled meats.
