This Savory Oatmeal Stuffing recipe can be eaten on it’s own, or stuffed in the holiday turkey! Simple ingredients that hold oh-so-much flavor.
Ingredients
- 1 tbsp oil or butter
- 1/2 onion, diced
- 1 carrot, diced
- 1 celery stalk, diced
- 2 oz mushroom, diced
- 2 cups chicken broth or vegetable broth
- 1 cup rolled oats
- 1 tbsp poultry seasoning OR 1 sage leaf chopped, 1 tsp rosemary, 1 tsp thyme, salt & pepper to taste

Instructions
- Heat the oil or butter in a pot over medium heat. Add the mushroom, onion, carrot, and celery. Cook for three to five minutes, until the onion turns translucent.
- Pour in the broth and bring it to a boil.
- Add the rolled oats and herbs. Stir well.
- Reduce the heat and cook until the oats reach your desired consistency. For stuffing a turkey, cook the mixture until it becomes thick and holds its shape.
- Taste and adjust seasoning with salt and pepper.

If you want a more textured version, you can add chopped nuts or dried cranberries.
