Ingredients
  • 1 tbsp oil or butter
  • 1/2 onion, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 oz mushroom, diced
  • 2 cups chicken broth or vegetable broth
  • 1 cup rolled oats
  • 1 tbsp poultry seasoning OR 1 sage leaf chopped, 1 tsp rosemary, 1 tsp thyme, salt & pepper to taste

Instructions
  1. Heat the oil or butter in a pot over medium heat. Add the mushroom, onion, carrot, and celery. Cook for three to five minutes, until the onion turns translucent.
  2. Pour in the broth and bring it to a boil.
  3. Add the rolled oats and herbs. Stir well.
  4. Reduce the heat and cook until the oats reach your desired consistency. For stuffing a turkey, cook the mixture until it becomes thick and holds its shape.
  5. Taste and adjust seasoning with salt and pepper.
Recipe Notes

If you want a more textured version, you can add chopped nuts or dried cranberries.
