Ingredients
Honey Miso Dressing
  • 1 tbsp miso
  • 1 tsp honey
  • 2 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 1 tsp soy sauce
Sweet Potato Bowl
  • 1 cup spicy greens
  • 1 cup cooked Farro or other grain
  • olive oil
  • salt
  • 1 sweet potato diced
  • 1/4 avocado sliced

Honey Miso Dressing
  1. Whisk ingredients together
  2. If too thick, add extra rice vinegar 1 tsp at a time
Assembling the Bowl
  1. Heat oven to 350
  2. Toss sweet potato with olive oil and salt and roast for 10 minutes
  3. Drain and rinse chickpeas
  4. Toss chickpeas with olive oil, paprika, and garlic powder
  5. Add to sheet tray with sweet potato. Roast sweet potato and chickpeas an additional 10 minutes.
  6. Layer bowl with grain, sweet potato, chickpeas, avocado and spicy greens.
  7. Drizzle dressing on top and enjoy!
