
A fresh and flavorful bowl with a bit of a kick.
Ingredients
Honey Miso Dressing
- 1 tbsp miso
- 1 tsp honey
- 2 tbsp rice vinegar
- 2 tbsp sesame oil
- 1 tsp soy sauce
Sweet Potato Bowl
- 1 cup spicy greens
- 1 cup cooked Farro or other grain
- olive oil
- salt
- 1 sweet potato diced
- 1/4 avocado sliced

Honey Miso Dressing
- Whisk ingredients together
- If too thick, add extra rice vinegar 1 tsp at a time
Assembling the Bowl
- Heat oven to 350
- Toss sweet potato with olive oil and salt and roast for 10 minutes
- Drain and rinse chickpeas
- Toss chickpeas with olive oil, paprika, and garlic powder
- Add to sheet tray with sweet potato. Roast sweet potato and chickpeas an additional 10 minutes.
- Layer bowl with grain, sweet potato, chickpeas, avocado and spicy greens.
- Drizzle dressing on top and enjoy!
