- 2 small eggplants, cut into 1/2-inch slices
- 1/4 cup olive oil
- 3 Tbsp lime juice
- 2 Tbsp Cajun seasoning
- 1/4 tsp salt and pepper, or to taste
- Preheat grill to medium heat.
- Brush eggplant slices with oil, lime juice, and Cajun seasoning. Sprinkle salt and pepper and let stand 5 minutes.
- Place eggplant on oiled grill and cover, grilling 4-5 minutes per side. Serve warm.
