- 1 medium sweet potato Japanese Sweet Potatoes work best, but any sweet potato will work
- 1 scoop vanilla ice cream
- caramel sauce for drizzling
- toasted sesame seeds for garnish

Instructions
- Preheat the oven to 350°F. Wash and dry the sweet potato. Pierce it a few times with a fork.
- Place directly on the oven rack or on a baking sheet. Roast for 45–60 minutes, until soft and easily pierced with a fork.
- Slice the potato in half lengthwise. Fluff the interior gently with a fork.
- Add a scoop of ice cream on top. Drizzle with caramel sauce and sprinkle with sesame seeds. Serve immediately.
Recipe Notes
Choose medium sweet potatoes for even cooking.
You can toast sesame seeds in a dry skillet over medium heat for extra flavor.
