Ingredients
- 4 Tbsp butter, divided
- 1 Tbsp olive oil
- 2 medium onion, diced
- 1 tsp brown sugar
- 8 slices thick cut bread
- 8 oz Gruyere cheese thinly sliced
- 4 oz White cheddar cheese thinly sliced or shredded
- 4 slices Muenster cheese thinly sliced
- salt and pepper, to taste

Instructions
- Add 2 Tbsp butter and olive oil and heat over medium low heat.
- Add diced onions, salt, and pepper to the hot skillet and saute, stirring often, until onions are soft and browning, about 10 minutes.
- Stir in brown sugar and cook for one minute.
- Transfer onions to a plate.
- Spread one side of two pieces of bread with butter.
- Add both pieces of bread, butter side down, and add cheese. Once cheese starts to melt, top with onions.
- Cook until bread is golden brown, about 3 minutes, and carefully sandwich the pieces of bread together.
- Cook on low until cheese is fully melted. Repeat process for additional servings.
