This is a great base recipe! Add extra produce to the pan or top with additional herbs from your garden.
2mediumzucchini(or prepacked zucchini, sweet potato, or butternut squash noodles)
1cupcherry tomatoes, halved
1pinchsalt and pepper, to taste
Wash the zucchinis and cut off the ends. Attach onto food spiralizer and turn the crank until the noodles are complete. Alternatively, use organic Earthgrown zucchini, sweet potato, or butternut squash noodles.
Using a medium skillet over medium heat, cook the onion until tender, about 5 minutes.
Add the garlic, cherry tomatoes, veggie noodles, and cook for 5-8 minutes, or until noodles are tender. Add salt and pepper to taste.
