Ingredients
- 1 cup ricotta cheese
- 1 Tbsp EV olive oil
- 1/2 tsp sea salt
- 1 Tbsp honey
- 2-3 tsp fresh thyme leaves
- 1/2 each lemon zest
- to taste fresh cracked black pepper

- Whip ricotta: Add ricotta, olive oil, and salt to a food processor (see note 1). Whip until smooth and fluffy.
- Garnish: Spoon the whipped ricotta into a bowl. Drizzle with honey, and top with thyme, lemon zest (if using), and pepper. Serve with whatever yummy dippers you have! We love a crusty baguette to slather all that goodness up.
