Ingredients
- 1 lb. asparagus, trimmed
- 2 tsp. extra virgin olive oil
- 1 1/2 cups grape tomatoes, halved
- 1/2 tsp. fresh garlic, minced
- 2 Tbsp. balsamic vinegar
- 1/2 tsp. salt and pepper, to taste
- 3 Tbsp. goat cheese, crumbled

- Cook asparagus in boiling water 2 min. or until crisp-tender; drain.
- Heat olive oil in a large skillet over medium-high heat.
- Add tomatoes and garlic; cook 5 minutes.
- Stir in vinegar, salt, and pepper; cook 3 minutes.
- Top asparagus with tomatoes. Sprinkle with cheese and pepper.
- Serve with crusty bread, rice, or pasta. Asparagus can also be grilled, baked, or pan-fried.
