Ingredients
- 1 cup dried brown lentils
- 1 1/2 cups vegetable broth
- 1 15 oz. can diced tomatoes
- 1/4 cup + 1 Tbsp. tomato paste
- 1 onion, chopped fine
- 1/2 green bell pepper, chopped
- 1 Tbsp. apple cider vinegar
- 3 cloves garlic, minced
- 1 1/2 tsp. oregano
- 1 1/2 tsp. smoked paprika
- 2 tsp. dried parsley
- 1 tsp. cumin
- 1 Tbsp. chili powder
- 1 tsp. salt
- 1 tsp. ground black pepper

Instructions
- Put all ingredients in your crockpot. Cover and cook on high for 3-4 hours or on low for 7-8 hours.
- Check for consistency; you may need to remove the lid for the last 30 minutes.
- Serve warm in buns or as a side dish. Leftover sloppy joe mixture will keep in the refrigerator up to 3 days.
