Ingredients
- 1 tbsp coconut oil
- 1/2 lime, freshly juiced
- 1/8 cup honey
- 1/2 tsp cayenne pepper
- 2 cod fillets
- 1/2 cup unsweetened coconut shreds
- 1/2 cup panko breadcrumbs

- Preheat oven to 425 degrees F.
- Coat baking dish with coconut oil.
- Combine the lime juice, honey and cayenne pepper and add to a medium bowl.
- Rinse fish and pat dry.
- Combine coconut and panko in a large bowl.
- Coat fish in lime & honey mixture then coat well in the coconut mixture.
- Place on baking sheet and bake for 18 minutes, or until the coconut turns a golden brown.
