Ingredients
- 1 lb black beans
- 1 Tbsp olive oil
- 6 cups water
- 1 medium onion, diced
- 5 cloves garlic, minced
- 1 medium red bell pepper, diced
- 1 Tbsp cumin
- 1 bay leaf
- 2 tsp salt

Instructions
- Place the beans in a big bowl, cover with water, rinse and drain.
- Place all items in crockpot.
- Cook on high for about 3-4 hours, testing after 3 hours. Add more salt if needed.
- Remove the bay leaf and serve warm or refrigerate for 1 week.
