Ingredients
- 1 cup uncooked quinoa
- 1 cup cherry tomatoes, sliced in half
- 1 large yellow pepper, diced
- 1 can black beans, rinsed and drained
- 1/2 small red onion, diced
- 1 medium avocado, sliced
- 1/2 cup frozen corn, thawed
Dressing
- 1/2 cup olive oil
- 3 Tbsp. lime juice
- 3 Tbsp. cilantro minced
- 1/2 Tbsp. cumin
- 1/2 Tbsp. chili powder
- 1/2 Tbsp. salt
- 1/2 Tbsp. coriander
- 1/2 Tbsp. chili powder
- 1/2 Tbsp. salt
- 3/4 tsp. cayenne pepper

Instructions
- Prepare quinoa according to package instructions. Set aside to cool.
- Combine quinoa and vegetables in a large mixing bowl.
- Add dressing ingredients to small bowl and whisk to combine. Add to quinoa and vegetable mixture and stir. Serve chilled, topped with cilantro.
