Ingredients
  • 4 small corn or flour tortillas
  • 1 cup black beans warmed
  • 4 large eggs scrambled
  • 1/2 cup cheddar, shredded
  • 1 avocado, sliced
  • 1/2 cup salsa
  • 1/4 cup cilantro
  • 1/4 cup sour cream

  1. Warm tortillas over medium heat in a large skilled.
  2. Top tortillas with black beans, scrambled eggs, cheese, avocado, salsa, cilantro and sour cream. Add any additional favorite toppings.
  3. Serve immediately and enjoy!
