Ingredients
- 2 medium sweet potatoes
- 1 Tbsp. olive oil
- 1/2 medium onion
- 1/4 tsp cumin
- 1/4 tsp chili powder
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/2 tsp salt
- 1 15 oz. can black beans, drained and rinsed
- 1/2 cup cheddar cheese, shredded
- 1/4 cup sour cream
- 3 medium green onions, chopped

- Preheat oven to 400 degrees Fahrenheit. Prick sweet potatoes with a fork in several places. Place in a baking dish and bake until tender, about 45-50 minutes.
- When the sweet potatoes have about 10 minutes left, heat the oil in a skillet over medium heat and then add in onion. Sauté for 5 minutes until the onions begins to become translucent.
- Add in the spices, salt, and black beans. Stir and cook for an additional 3-5 minutes.
- Once the sweet potatoes are done baking, let cool slightly. Cut each sweet potato lengthwise then create a well in the center of each half using a spoon.
- Spoon the bean mixture into the well of each potato half and top as desired. We recommend sour cream, shredded cheddar cheese, and green onion. Avocado, cilantro, and diced tomatoes or salsa would be great additions too!
