Ingredients
- 1/4 cup dried apricots, finely chopped
- 1/2 cup dark brown sugar, packed
- 1/2 cup golden raisins
- 1 cup water
- 3 cups fresh cranberries
- 1 Granny Smith apple, chopped
- 1 tsp. lime zest
- 1/4 cup fresh lime juice
- 1/4 cup crystallized ginger, finely chopped
- 1/2 tsp. crushed red pepper flakes

Instructions
- In a saucepan, mix apricots, brown sugar, raisins and water. Bring to a boil. Reduce heat and simmer 5 minutes, stirring constantly.
- Add cranberries, apple and lime zest. Simmer for 10 minutes.
- Mix in lime juice, crystallized ginger and red pepper flakes. Serve at room temperature or chilled over your favorite protein or spread on bread.
