Ingredients
- 1 cup cooked brown rice
- 1 cup cooked quinoa
- 2 cups arugula
- 1 cup grape tomatoes, halved
- 1/2 medium red bell pepper, diced
- 1 cucumber, diced
- 1/3 cup Kalamata olives
- 2 Tbsp. red onion, diced
- 1/2 cup hummus
- 1/3 cup feta
- 1/2 cup plain Greek yogurt
- 1 clove garlic, minced
- 1/2 lemon, juiced
- 1/4 cup tahini

Instructions
- Layer rice, quinoa, arugula, tomato, bell pepper, cucumber, red onion and olives in a bowl.
- Mix together plain Greek yogurt, garlic, juice from 1/2 lemon, and tahini.
- Top bowl with dressing mixture, hummus and feta.
