Ingredients
- 12 oz. pasta, cooked to package instructions
- 2 cups halved cherry tomatoes
- 1/3 cup Kalamata olives
- 1 can garbanzo beans, drained and rinsed
- 2 cups arugula
- 1 red bell pepper, diced
- 1/2 medium red onion, diced
- 1 medium cucumber, diced
- 1 cup feta cheese
- 1 cup basil leaves torn
- 1/2 cup extra virgin olive oil
- 3 Tbsp. lemon juice
- 1 tsp. Dijon mustard
- 3 garlic cloves, minced
- 1/2 tsp. oregano
- 1/2 tsp. dried basil
- 1/4 tsp. thyme
- ¼ tsp. red pepper flakes
- ¾ tsp. sea salt

- In a small bowl, whisk together the olive oil, lemon juice, mustard, garlic, herbs and salt.
- Add the pasta to a large bowl with the tomatoes, olives, garbanzo beans, arugula, bell pepper, cucumbers and feta.
- Pour in the dressing and toss to coat.
