Pasta with Roasted Tomatoes
Pasta + Cherry Tomatoes + Garlic + Mozzarella + Basil
Toss tomatoes with olive oil, two cloves of minced garlic, salt and pepper, and roast for 15-20 minutes at 400° F. Cook pasta according to package directions. To serve, toss pasta with roasted tomatoes, add fresh mozzarella or burrata, and top with chopped fresh basil.
Beans & Rice with Sausage and Kale

Cook rice according to package directions. Slice sausage and pan-fry until browned, then remove from pan and set aside. Sauté chopped kale in the same pan with oil, salt and pepper. Heat beans and combine with cooked rice. Serve beans and rice topped with sausage and kale. Enjoy!
Personal Pita Pizzas
Baba’s Pitas + Pizza Sauce + Shredded Mozzarella + Applegate Farms Pepperoni
Preheat oven to 375° F. Spread a layer of sauce on top of the pita, then sprinkle with cheese and add pepperoni. Bake for 10-15 minutes. Tip: Add any other favorite toppings like spinach, mushrooms, olives or peppers!
Shredded Salsa Chicken
2 lbs. Chicken + 2 Jars Salsa + Tortillas + Shredded Cheese + Avocado
Place chicken in a slow cooker. Pour the jars of salsa over the chicken, stir, and cover. Cook on high for 4 hours or on low for 7 hours. Once cooked through, use two forks to shred the chicken. Serve in tortillas with your favorite toppings. Also delicious over rice!
Vegetable Gnocchi
Gnocchi + Grape Tomatoes + Red Onion + Zucchini + Parmesan
Chop onion and zucchini. Add to a large bowl with tomatoes and gnocchi, and toss with olive oil, salt, pepper, and any desired herbs or spices you have in your pantry. Spread out on a large baking sheet and roast for 20-30 minutes at 450° F, stirring halfway through, until the gnocchi are golden and the vegetables are tender and caramelized. Serve topped with parmesan.
BBQ Jackfruit Sandwiches
Canned Jackfruit + Triple Crown BBQ Sauce + Shredded Cabbage + Salad Girl Sweet & Sassy Dressing + Buns
Drain jackfruit and cook with barbecue sauce in a skillet until tender and resembling the texture of pulled pork. In a bowl, toss cabbage with dressing. Serve the barbecue jackfruit on a bun topped with slaw.
Falafel Pita Sandwiches
Baba’s Pitas + Frozen Falafel + Tzatziki Sauce + Tomato + Cucumber
Cook falafel according to package directions. Chop cucumber and tomato and warm pitas, if desired. Slice pita in half and fill pockets with falafel, veggies and tzatziki sauce to taste.
Tikka Masala Tofu

Cube tofu and cook with sauce, following the directions on the jar. Heat rice according to package instructions. Serve tofu over rice, topping with freshly chopped cilantro, if desired.
Chevre Toast with Roasted Grapes
Grapes + Rosemary + Goat Cheese + Baguette
Place 2 cups of cleaned, destemmed grapes on a baking sheet. Toss with 1 Tbsp. oil, 2 tsp. chopped fresh rosemary, and a pinch of salt. Roast for 20 minutes at 425° F. Slice the baguette and place on another baking sheet; toast in the oven during the last few minutes of the grapes’ cooking time. Spread chevre onto baguette slices and top with a generous spoonful of roasted grapes. Enjoy!
Polenta with Meatballs
Pre-Cooked Polenta + Plant-Based Meatballs + Tomato Sauce + Parmesan
Cook meatballs according to package directions. Slice polenta into rounds and lightly sauté in oil. To serve, top polenta with meatballs, heated pasta sauce, and freshly grated parmesan.
