Ingredients
- 2 cups cooked fluffy brown rice
- 2 cups cooked simple black beans
- 1/2 the roasted sweet potatoes
- 1 bunch cilantro
- 1 lime
- 1 tsp. granulated garlic
- olive oil, salt and pepper
Fluffy Brown Rice
- 2 cups brown rice
- salt and pepper to taste
Simple Black Beans
- 1 cup dry black beans
Roasted Sweet Potatoes
- 2 sweet potatoes
- 3 tbsp oil
- salt and pepper to taste
- garlic optional, to taste
- paprika optional, to taste

Instructions
Fluffy Brown Rice
- Rinse 2 cups brown rice.
- Add rice and 4 cups water to a pot with a tight-fitting lid. Season with salt and pepper.
- Bring to a boil and reduce heat to low. Simmer for 25-30 minutes or until water is absorbed and rice is soft.
Roasted Sweet Potatoes
- Heat oven to 400°F.
- Peel sweet potatoes and dice into 1/2″ cubes.
- Toss sweet potatoes with 1 Tbsp. oil and seasonings of your choice (salt and pepper, garlic, paprika, etc.).
- Place directly on a baking sheet and roast 20 minutes, or until caramelized and fork-tender.
Simple Black Beans
- Rinse beans.
- Cover with boiling water in a glass bowl and allow to soak for 30-60 minutes.
- Drain and add to a large pot with enough fresh water to cover by 2 inches.
- Bring to a boil, reduce heat to low, and simmer for 1-2 hours until beans are tender. Season with salt and pepper.
Assembling the Bowl
- Wash and dry produce. Remove cilantro leaves from stems and mince leaves. Zest and juice one lime.
- Assemble prepped ingredients: rice, black beans, and sweet potatoes.
- In a small bowl, combine 6 Tbsp. olive oil, 3 Tbsp. chopped cilantro, lime zest and juice, and salt and pepper to taste. Whisk together to make vinaigrette. (Or add all ingredients to a blender and blend until smooth.)
- Serve brown rice, roasted sweet potatoes, and black beans in bowls. Top with cilantro lime vinaigrette. Enjoy!
