Melted zucchini is great with eggs for a health breakfast. It is also great as a side underneath baked chicken or tofu. This is a great way to use up huge summer zucchini and get nutrient-packed meals.
Ingredients
- 1 ea zucchini Or carrot
- 1 tbsp butter Or your choice of oil
- 1 clove garlic
- 1/2 cup grape tomato chopped
- 1 pinch salt

Instructions
- Heat frying pan and add oil.
- Grate zucchini directly into pan.
- Chop garlic and toss in.
- Cook 8 mins.
- Add chopped tomato and cook 3 mins.
