Melted zucchini is great with eggs for a health breakfast. It is also great as a side underneath baked chicken or tofu. This is a great way to use up huge summer zucchini and get nutrient-packed meals.

Ingredients
  • 1 ea zucchini Or carrot
  • 1 tbsp butter Or your choice of oil
  • 1 clove garlic
  • 1/2 cup grape tomato chopped
  • 1 pinch salt

  1. Heat frying pan and add oil.
  2. Grate zucchini directly into pan.
  3. Chop garlic and toss in.
  4. Cook 8 mins.
  5. Add chopped tomato and cook 3 mins.
