
Use this easy Roasted Delicata Squash recipe to get started.
Ingredients
- 1 roasted Delicata squash sliced
- 2 cups mixed greens
- 2 tbsps pepitas (toasted pumpkin seeds)
- 1 tbsp goat cheese crumbled
- 1/2 cup dried cranberries
- vinaigrette of choice store-bought or homemade

Instructions
- Place the mixed greens in a serving bowl.
- Arrange roasted squash slices on top.
- Sprinkle with pepitas, dried cranberries and goat cheese.
- Drizzle with vinaigrette just before serving and toss gently.
Recipe Notes
A simple vinaigrette can be made by whisking 3 parts olive oil to 1 part vinegar, with a pinch of salt and a touch of mustard.
