Ingredients
  • 1 bag Harmony Valley Soup Mix
  • 2 tbsp butter, bacon fat, or olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 carrot chopped
  • 1 celery stalk chopped
  • 2-4 tbsp rice adds thickness to porridge
  • 1 tsp miso paste
  • 1 tsp salt more to taste
  • black pepper to taste
  • 1 splash vinegar at the end

Instructions
  1. Rinse, peel and chop the Harmony Valley Soup Mix.
  2. In a heavy pot, melt the butter (or bacon fat or olive oil) over medium heat. Add the onion, carrot, and celery. Cook slowly until softened, about 8 minutes. Do not rush this. Flavor starts here.
  3. Add the garlic and cook for 30 seconds.
  4. Add chopped Harmony Valley Soup Mix and cook 2 minutes.
  5. Add rice, stock and salt. Bring to a boil, then reduce to a steady simmer.
  6. Simmer uncovered for 60-90 minutes, stirring occasionally. Add water as needed. You want it thick. Soup is done when the veggies are cooked and start to fall apart.
  7. Using a wooden spoon, gently mash the softened veggies against the side of the pot to thicken the soup.
  8. Add miso paste and black pepper, stir to heat through.
  9. Finish with a small splash of vinegar if the flavor feels flat.
