Ingredients
  • 1 jar (10 oz) sauerkraut with liquid
  • 1 carrot diced
  • 1 rib celery diced
  • 1 tbsp caraway seeds
  • 4 cups low sodium chicken broth
  • 6-10 ounces sausage (kielbasa or smoked) sliced
  • 1-2 small red potatoes diced
  • 1 green apple peeled and diced

  1. Preheat oven to 400°F. Arrange sausage slices on a sheet pan and roast for 10–15 minutes, until browned. This step builds flavor.
  2. Meanwhile, heat 1 tablespoon oil in a soup pot over medium heat. Sauté onion, carrot, and celery for 5–7 minutes, until softened and fragrant.
  3. Add the chicken broth, caraway seeds, potatoes, and apple. Bring to a gentle simmer and cook for 10–15 minutes, until the potatoes are tender.
  4. Stir in the browned sausage and sauerkraut (including the liquid). Simmer gently for another 5–10 minutes to meld flavors.
