Ingredients
- 1 Tbsp olive oil
- 1 medium onion, chopped
- 1 clove garlic, minced
- 6 whole mushrooms, roughly chopped
- 1 medium tomato, cubed
- 1 can navy beans, drained and rinsed
- 1/2 bunch swiss chard, roughly chopped
- 1 pinch salt and pepper, to taste
- 1 Tbsp Parmesan cheese, grated for garnish
- 1 Tbsp basil or thyme for garnish

Instructions
- Heat oil in pan and add onions, cooking until translucent, about 5 minutes.
- Add garlic and cook until golden, about 3 minutes.
- Add mushrooms and cook until softened and golden.
- Add tomato and cook, stirring occasionally.
- Add the beans and cook until they are warmed through.
- Add Swiss chard last, cooking until greens break down to your liking.
- Garnish with cheese & herbs.

Serving ideas: Serve over rice, pasta, or with crusty bread. Add cooked chicken, or any of your favorite vegetables.
