Ingredients
Tacos
  • 8 each eggs
  • 8 ounces chorizo
  • 12 small corn tortillas
  • 1/4 cups cilantro, chopped
  • to taste red salsa
Additional Toppings
  • 1/4 cup shredded cheese or crumbled cotija
  • 1 each sliced jalapenos
  • 1/4 cup onion, minced

Instructions
  1. Place the chorizo in a frypan and sauté for at least five minutes or until the outer edges of the sausage are a little crispy.
  2. Place the eggs into the same fry pan and scramble to the consistency of your liking.
  3. Remove from the burner when the eggs are fully cooked, (approximately 5 minutes) and set aside.
  4. Cook the corn tortillas according to package instructions.
  5. Layer your ingredients to your liking and enjoy!
