Tacos for breakfast are always a good idea! Grab your favorite chorizo, classic pork, turkey, or even a meatless substitute and try this recipe for a breakfast taco that will make every morning worth getting up for!
Ingredients

- 8 each eggs
- 8 ounces chorizo
- 12 small corn tortillas
- 1/4 cups cilantro, chopped
- to taste red salsa
Additional Toppings
- 1/4 cup shredded cheese or crumbled cotija
- 1 each sliced jalapenos
- 1/4 cup onion, minced

Instructions
- Place the chorizo in a frypan and sauté for at least five minutes or until the outer edges of the sausage are a little crispy.
- Place the eggs into the same fry pan and scramble to the consistency of your liking.
- Remove from the burner when the eggs are fully cooked, (approximately 5 minutes) and set aside.
- Cook the corn tortillas according to package instructions.
- Layer your ingredients to your liking and enjoy!
