Citrus Collard Greens with Raisins

  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 bunch collard greens, stems removed and sliced into strips
  • 1/2 tsp salt
  • 2/3 cup raisins
  • 1 medium navel orange
  1. Heat oil in a large skillet over medium heat.
  2. Add garlic and sauté 1 minute.
  3. Add collards and continue to cook 3-5 minutes or until softened.
  4. Add salt and raisins, sauté 3 minutes.
  5. Slice orange in half and squeeze juice over greens; cook 1 minute more.
  6. Season with salt and pepper to taste and serve.
