A sweet, flavorful rice pudding with local apples.

  • 1 15 oz can coconut milk
  • 1 cup brown rice
  • 1 apple, peeled, cored and diced
  • 1/4 cup maple syrup
  • 1 Tbsp. vanilla extract
  • 2 tsp. ground cinnamon
  • 1 cup unsweetened almond milk
  • 1/8 tsp. ground nutmeg
  • 1 cup raisins
Servings: people
  1. Pour coconut milk into a saucepan and bring to a boil.
  2. Add rice to the boiling coconut milk.
  3. Let it boil for 5 minutes, cover, then lower heat and simmer for 20 minutes.
  4. Remove lid, stir, add in apple, maple syrup, vanilla extract, cinnamon, 1 cup almond milk, nutmeg, and raisins. Mix well.
  5. Continue to cook for another 10 minutes. Add more almond milk to reach desired consistency.
  6. Stir frequently so the rice doesn't stick to the bottom of the pan. Remove from heat and chill until cold, then serve.
