- 1 lb sweet potatoes

- Preheat oven to 375°F and line a baking sheet with parchment paper (or spray baking sheet with nonstick cooking spray).
- Wash, peel and chop sweet potatoes into ½-inch cubes.
- Place cubes on greased or parchment paper-lined baking sheet. Drizzle with olive oil and sprinkle with salt, pepper and cumin to taste. Toss with hands until each cube is well-coated.
- Roast for 40 minutes or until desired doneness.
