Ingredients
- 1 bag Harmony Valley Soup Mix
- 2 tbsp butter, bacon fat, or olive oil
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 carrot chopped
- 1 celery stalk chopped
- 2-4 tbsp rice adds thickness to porridge
- 1 tsp miso paste
- 1 tsp salt more to taste
- black pepper to taste
- 1 splash vinegar at the end

- Rinse, peel and chop the Harmony Valley Soup Mix.
- In a heavy pot, melt the butter (or bacon fat or olive oil) over medium heat. Add the onion, carrot, and celery. Cook slowly until softened, about 8 minutes. Do not rush this. Flavor starts here.
- Add the garlic and cook for 30 seconds.
- Add chopped Harmony Valley Soup Mix and cook 2 minutes.
- Add rice, stock and salt. Bring to a boil, then reduce to a steady simmer.
- Simmer uncovered for 60-90 minutes, stirring occasionally. Add water as needed. You want it thick. Soup is done when the veggies are cooked and start to fall apart.
- Using a wooden spoon, gently mash the softened veggies against the side of the pot to thicken the soup.
- Add miso paste and black pepper, stir to heat through.
- Finish with a small splash of vinegar if the flavor feels flat.
