Ingredients
- 2 whole stirato rolls
- 1 Tbsp mayonnaise
- 1/2 cup salad greens
- 2 rolled slices pancetta, approx. 5 inches wide
- 2 large duck eggs
- 1 pinch salt and pepper

- Cut stiratos in half; add thin coating of mayonnaise, and a small handful of greens to one side.
- Heat an 8- or 10-inch heavy skillet on medium-high; once it is hot, lay a rolled slice of pancetta in pan, turn heat to medium, and allow pancetta to fry until some of its fat has tried out.
- Crack one duck egg emphatically on a hard surface and pour into pan atop slice of pancetta. Cook to your preference, then turn the pancetta-egg package over with a spatula. When second side is done to your taste, pile the egg & pancetta on the bottom slice of stirato, add salt and pepper to taste, top with other slice, and serve.
- Repeat for second sandwich.
