Green Beans with Dates and Walnuts

  • 1 lb green beans, washed & trimmed
  • 2 Tbsp olive oil
  • 1 medium red onion, thinly sliced
  • 1/3 cup dates, chopped
  • 1/3 cup walnuts, chopped
  • 1 pinch cayenne pepper
  • 1 pinch salt, to taste
  1. In a large skillet, heat olive oil over medium heat. Add sliced onions and green beans and cook 3-5 minutes.
  2. Add walnuts, dates, and cayenne until the nuts are slightly toasted and beans are heated through, about 3-4 more minutes.
  3. Season to taste with salt and serve.
