Green Pea & Mint Pesto

  • 1 10oz bag frozen sweet green peas
  • 1/4 cup fresh mint leaves
  • 1/2 cup freshly grated Parmigiano-Reggiano cheese
  • 1/3 cup extra virgin olive oil
  • 1 clove garlic
  • 1 pinch salt, to taste
  • 1 pinch black pepper, freshly ground
  • 1/2 cup pine nuts, toasted
  1. Add 1 Tbsp olive oil to a small pan and heat on medium-high heat for 30 seconds to 1 minute. Place pine nuts in pan and toast until golden brown. Remove pine nuts from pan and place in a food processor.
  2. Add peas, mint, garlic, and freshly grated cheese to food processor. Pulse to combine ingredients.
  3. With food processor running on low, slowly pour in 1/3 cup olive oil until all ingredients are well combined, about 2 minutes.
  4. Taste and add in salt and pepper to your liking. Blend to combine.
  5. Serve on crostini, with pasta, or use as a healthy dipping sauce for fresh veggies.
